Ethiopia Sidama Ayla Shantawene Washed (Ultralight) is a rare, intentionally ultra-light roasted Ethiopian coffee that preserves every layer of its origin character — stone fruits, white florals, and a refined tea-like structure that evolves beautifully as it cools.

Early cups lean ultra-clean and elegant with soft peach and nectarine. With rest, the profile opens into increasing sweetness, creaminess, and sparkling citrus complexity. This is a coffee for those who want to taste the farm, not the roast.

⚠️ Resting Required: “Corn chips” notes will appear before 7 days and disappear after 8+ days. Allow 21 days for pour-over. 3–5 weeks for espresso.

🌍 Farm & Process

Washed at the Ayla Washing Station, owned by Testi Trading and operated by the Yonis family in Sidama, Ethiopia. Depulped within 8 hours of picking, fermented 36–48 hours, fully washed in running water canals, then dried on raised beds under shade nets for 5–7 days to 11–12% moisture.

Testi Trading’s Project Direct initiative has funded multiple primary schools and the first-ever high school in the town of Hamasho, Sidama.
