Supremo Exquisite is a specialty-grade Ethiopian profile coffee from the Koke Farm, grown at 1,800 meters by the Guadalupe Cooperative. Java variety, washed process, 86+ SCA cupping score. The washed process produces a clean, crisp cup that lets the Java variety’s floral and citrus character come through without the added fruit complexity of natural processing — jasmine aromatics, bright citrus notes, gentle harmonious sweetness, balanced bright acidity, medium smooth well-rounded body.
At $20.95 it’s the highest-priced coffee in the catalog — the 86+ SCA score is why. An 86+ cupping score means this lot was formally evaluated by trained Q-graders against the Specialty Coffee Association’s 100-point scale; 86+ is the SCA threshold for specialty-grade designation. This lot cleared it.
Available in Whole Bean or Ground, 12oz or 5lb.

Brew Methods
- Pour-over — the definitive method for a washed Ethiopian-profile Java; the clean process and bright acidity are best expressed without pressure or immersion interference. Medium-fine grind, bloom 30–45 seconds, slow controlled pour. Drink black — this is what the score was given for
- AeroPress — clean extraction, medium grind, 2 minutes; preserves the jasmine florality and citrus brightness with good clarity
- Cold brew — washed Ethiopian profile translates well cold; the brightness softens into clean sweetness, the floral notes stay present. Coarse grind, 12–14 hours
- Grind fresh immediately before brewing — the floral aromatics in a washed Java at this score level are volatile; a burr grinder at medium setting, ground immediately before the kettle is off the heat
Supremo Exquisite sits alongside the Shrine Blend Cup of Excellence winner and Golden Harvest Geisha+Java natural process as one of three specialty single-origin standouts in the catalog. Washed vs. natural is the key distinction from Golden Harvest: this is cleaner, brighter, and more origin-focused; Golden Harvest is more complex, fruit-forward, and aromatic. Both reward attention. This one rewards a pour-over and 10 quiet minutes.
