Coffee of the Cross is the unflavored single-origin expression from Guadalupe Farms in the Matagalpa Highlands of Nicaragua — grown at 1,000–1,800 meters on a farm owned by the Diocese of Matagalpa and managed by Guadalupe Roastery. 100% of revenue from this coffee goes back to the farm, supporting apostolic work, economic sustainability, and dignified labor for the farming cooperative. This is the coffee that the entire Guadalupe Roastery mission is built around.

The Farm
Guadalupe Farms sits in the Matagalpa Highlands of northern Nicaragua at 1,000–1,800 meters — the same farm that produced the award-winning Shrine Blend (4th place, 2025 Nicaragua Cup of Excellence) and the beans used across the Coffee of the Cross flavored line. It is owned by the Diocese of Matagalpa. Every bag of Coffee of the Cross unflavored sends 100% of revenue back to support the farm’s apostolic mission directly.
Flavor Profile by Roast
- Light Roast — the bright, fruity complexity and natural acidity of the high-altitude Nicaraguan Arabica are most present here; the origin character leads, baker’s chocolate and black pepper notes are subtle and clean
- Medium Roast — the balance point: baker’s chocolate richness, black pepper depth, and bright fruit complexity in equal measure; average acidity, body, and sweetness; approachable for any brewing method
- Dark Roast — the roast character comes forward; baker’s chocolate deepens, the black pepper note becomes more pronounced, the bright fruit recedes into the background; bold, full-bodied, lower acidity
Brew Methods
- Pour-over (Light or Medium) — the clean high-altitude Arabica character and the origin notes come through most clearly; medium grind, bloom 30 seconds
- Drip coffee makers (Medium or Dark) — consistent and reliable at any roast level; the chocolate and pepper notes are most apparent here, black or with cream
- French press (Dark) — full immersion brings out the full body and the roast character; the dark chocolate and black pepper finish develops fully
- Espresso (Dark) — bold, chocolatey shot; the black pepper note cuts through milk in a latte or cappuccino
