What does anaerobic natural mean?
Natural processing means the coffee is dried with the fruit still around the seed. Anaerobic fermentation takes place in a low-oxygen environment. For this coffee, that includes 84 hours in barrels, followed by 24 hours of sun drying and careful tunnel drying for up to 28 days. The result is a distinctive cup with fruit-forward flavor and layered sweetness.
A coffee with a family history
Bayardo grows this Maragogipe from heritage seeds saved from his grandfather’s original farm, Finca San Jose. After that farm was lost during the Nicaraguan revolution in 1979, the seeds were preserved and later replanted at Finca San Jose de las Nubes. They kept the family’s connection to this coffee alive.
Maragogipe takes extra care and resources to grow. This limited release reflects that work, along with generations of family history.
