Rich, smooth, and sweeter than you'd expect. A Fair Trade and Organic certified single origin from Mexico, roasted by Bendix in Michiana. Full and bold without the burnt edge most dark roasts lean on.
What it tastes like
Full-bodied and rich up front, finishing smooth and sweet rather than ashy. Mexican coffee tends toward chocolate, nuts, and mild acidity, which is why it takes a dark roast well. Some origins get flattened by dark roasting and lose everything interesting. This one has the body to carry it.
Dark roast, honestly
Dark roasting pushes flavour away from the bean and toward the roast itself, so you get chocolate, caramelized sugar, and a heavier body, but less of the origin's individual character. That's not a flaw, it's a choice. If you take your coffee with milk, want something forgiving, or just find bright coffees too sour, dark is the right pick and anyone who tells you otherwise is being snobby about it.
The one real risk is bitterness, and that's usually over-extraction rather than the beans. Dark roasted beans are more brittle and give up their solubles faster, so grind a touch coarser than you would for a medium roast and don't let the water sit on the grounds too long.
How to brew it
Drip and French press are the natural fits, and it makes a solid espresso base where the chocolate carries through milk. Pour-over and AeroPress work too. For French press, grind coarse and pull the plunger at four minutes.
Fair Trade and Organic, what they mean
Fair Trade sets a price floor paid to the growing cooperative, which protects farmers when the commodity market drops. Organic covers how it was grown, no synthetic pesticides or fertilizers. Two separate certifications, two different things, and this carries both.
