The original cold brew maker, around for over 50 years and still the one most cafes use behind the counter. No electricity, no filters to fuss with mid-brew. Steep overnight, pull the stopper, and you have concentrate.

Why cold brew tastes different

Hot water extracts fast and pulls out a lot of the acids and bitter compounds along with the good stuff. Cold water works slowly and simply doesn't dissolve as much of them, so what you get is rounder, sweeter, and much gentler on your stomach.

It's genuinely a different drink rather than iced coffee. Iced coffee is brewed hot and chilled, which keeps the acidity and often turns thin as the ice melts. Cold brew never sees heat.

How it actually goes

Grind about 12oz of coffee coarse, the texture of raw sugar. Add it to the brewing container with 7 cups of water, let it sit 12 to 24 hours at room temperature or in the fridge, then pull the stopper and let it filter down into the glass decanter.

Coarse grind matters more here than with any other method. Fine grounds clog the felt filter and slow the draw to a crawl.

What you do with 48oz of concentrate

It's concentrate, not ready-to-drink, so cut it roughly one to one with water or milk to taste. Over ice for iced coffee, with hot water for a hot cup that still has the smooth cold-brew character, or as the base for anything you'd normally build with espresso. It keeps about two weeks in the fridge, which is the real advantage: one brew session covers most of a fortnight.

It works for tea too, and the result is noticeably less bitter than hot-brewed.
