Producers Jhoan Vergara and Adrian Lasso process the coffee at Beneficio Peñas Blancas. The cherries go through about 60 hours of washed anaerobic fermentation, followed by thermal shock, controlled drying, and sugarcane ethyl acetate (EA) decaffeination.
