If you like a lighter roast with a little fruit and plenty of sweetness, this is a good place to start. Peru Miel de Cajamarca from Thanksgiving Coffee Company brings together notes of honey, papaya, and milk chocolate, with a soft citrus-like acidity that gives the cup a little lift.
Those are tasting notes, not added ingredients: think honey-like sweetness, a touch of tropical fruit, and a gentle chocolate note. If you're new to specialty coffee, “acidity” describes that bright quality in the cup, not how much caffeine it contains.

The people behind the coffee
Miel de Cajamarca is grown in the high, lush mountains of northern Peru. Around 2,000 family farmers produce this coffee beneath the shade of guava, acacia, orange, and banana trees.
These growers belong to CENFROCAFE, an association of more than 80 small cooperatives. Working together helps them produce distinctive Peruvian coffee while caring for the surrounding mountain ecosystem. That's a real community behind the bag, not just a place name on the label. Choose the right grind for your setup
Choose whole bean if you have a grinder and want to grind just before brewing. No grinder? Pick the option that matches your method: Auto Drip for a drip coffee maker, French Press for immersion brewing, Espresso for an espresso setup, or Turkish for Turkish-style preparation.
For espresso, whole bean gives you more room to adjust the grind for your particular machine. A preground espresso option is convenient, but it doesn't let you fine-tune the grind as you dial in your shot.
A simple place to start brewing
For drip or pour-over, try about 1 gram of coffee for every 16 grams of water. That's roughly 20 grams of coffee to 320 grams of water. Treat it as a starting point, then adjust to your taste. A scale makes it easier to repeat the cup you liked.
The 12oz bag is a practical way to get to know this coffee. Choose the 5lb bag when it's already part of your daily routine or you're brewing for more people. If honey-like sweetness, tropical fruit, and a lighter roast sound like your kind of cup, Miel de Cajamarca is worth making room for.
