Why a gooseneck kettle at all

A regular kettle dumps. The wide spout drops water fast and hard, which digs a hole in the coffee bed and lets water race through the gaps instead of soaking everything evenly. That's channeling, and it's why the same beans can taste sour and bitter in the same cup.

The narrow bent spout on a gooseneck slows the flow and, more importantly, makes it predictable. You can lay down a thin steady stream, circle the bed, and stop exactly where you want. Pour-over is the one brew method where your hand is part of the equipment, and this is what makes your hand accurate.

The narrow spout gives up heat quickly as water travels down it, so water leaves a Buono a little cooler than it is in the body. Boil, wait about thirty seconds, and you'll land close to the 200 to 205°F range pour-over wants without owning a temperature-control kettle.

Using it

Pour a small amount first to wet the grounds and let them bloom for thirty seconds, then pour in slow circles from the center outward, keeping the stream thin. Don't pour down the sides of the filter, that water skips the coffee entirely.
