Two jobs, one kettle

The spout controls how you pour. A wide kitchen kettle dumps water, which punches into the coffee bed and carves channels so water races through the gaps instead of soaking everything. A gooseneck lays down a thin, steady, aimable stream. Pour-over is the one method where your hand is part of the equipment.

The thermostat controls what you pour. Boiling water is 212°F and coffee wants 195 to 205°F, so with a standard kettle you're boiling and then guessing at the wait. Set it here and you just get the temperature.

Temperatures worth knowing

• 195 to 205°F for coffee, toward the top for light roasts, lower for dark
• 175 to 185°F for green tea, which turns bitter at boiling
• 212°F for black tea and for rinsing filters and preheating gear

Six presets cover the common ones, and one-degree steps are there if you want to chase the last bit of precision on a light roast.

Why the hold matters more than it sounds

Sixty minutes at temperature means you can heat water, grind, weigh, rinse the filter, and pour without the water sliding out of range while you fuss. It also means a second cup doesn't mean starting over. If you've ever had a pour-over go thin and sour for no obvious reason, drifting water temperature was probably why.
