Why use an airtight coffee canister?

Exposure to air can dull coffee's aroma and flavor over time. Keeping beans in a sealed container between brews helps limit that exposure compared with leaving them in an open bag. It's a practical storage habit, not a way to make older beans fresh again.

What does the one-way CO₂ valve do?
