What oxygen does to your beans

Roasting creates the volatile aromatic compounds that give coffee its fragrance and its top notes, and those are exactly what you pay extra for with specialty beans. Oxygen reacts with them, and with the oils in the bean, and they go first. That's why a two-week-old bag smells like almost nothing compared with the day you opened it.

An ordinary airtight container seals a container's worth of air in alongside the coffee. Pulling that air out leaves far less oxygen in there to do the damage.

What it will and won't do

It slows staling. It doesn't stop it. Coffee is still at its best within a few weeks of roasting and nothing on a counter changes that. What it prevents is the last third of the bag tasting noticeably worse than the first third, which is where most of the loss actually happens.

Keep it somewhere cool and out of direct sunlight, because heat and light degrade coffee too and a vacuum doesn't help with either.
