What it tastes like

Sweet and fruit-forward with a smooth body and a clean finish. Low acidity, so it won't bite if bright African coffees have ever been too sharp for you. This is a Central American profile at its most approachable: think caramel sweetness and soft fruit rather than the lemon-and-florals end of the spectrum.

Where it comes from

Grown in the mountain highlands above Matagalpa, Nicaragua, one of Central America's most respected growing regions. Altitude is what's doing the work here. Coffee cherries ripen more slowly at elevation, which concentrates sugars and gives you a denser bean and a sweeter cup.

How to brew it

Drip and pour-over both suit it well. Grind medium-coarse, like sea salt, for pour-over, and aim for a 1:16 ratio, roughly 20g of coffee to 320g of water. It also holds up fine as a medium-dark leaning espresso if that's your thing.
