What you're drinking
This is the Nispero lot from Finca Los Nogales, grown around 1,900 meters. The coffee is fermented for 24 hours, washed, dried on raised beds, and decaffeinated using ethyl acetate derived from coffee mucilage. That's what “mucilage EA decaf” means here: the source of the decaffeination solvent is coffee fruit rather than sugarcane.
