If you want a decaf that tastes more like fruit than chocolate, meet Lychee Peach. This light-roast Castillo from Finca El Paraíso in Colombia has notes of peach, lychee, apple, and caramel, with a creamy feel and a clean finish.
Diego Samuel Bermudez and his family grow this coffee near Timbío in Cauca. They use selected YN-09 yeast, anaerobic washed fermentation, and thermal shock before the coffee is decaffeinated with the sugarcane ethyl acetate (EA) method. That's a lot of process vocabulary, but the useful takeaway is a sweet, tropical cup with a clear fruit profile.
