What Golden Cup certification means

The Specialty Coffee Association tests brewers against a standard covering brew temperature, contact time, and the strength and extraction of the finished coffee. A machine only earns Golden Cup approval if it hits that target on its own, out of the box.

It matters because temperature is where cheap drip machines fall down. Too cool and you extract the sour acids without the sugars that balance them. Too hot and you pull bitterness. Holding the right window through the whole cycle, not just the first thirty seconds, is the difference between coffee and hot brown water.

Bloom function

Fresh coffee gives off carbon dioxide, and that gas physically holds water away from the grounds. Pre-infusion wets the bed and pauses so the gas can escape, then brews properly, which gives you a more even extraction and a rounder cup. You'll notice it most with beans roasted in the last couple of weeks.

Thermal or glass carafe?

Take the thermal if you drink your coffee over an hour or two. It holds heat without a hotplate, and a hotplate is what makes the second cup taste scorched.

Take the glass if you finish the pot quickly, or you like seeing how much is left. It's the simpler, easier-to-clean option, and if the carafe is empty within twenty minutes the insulation isn't doing much for you anyway.
