Thin paper discs that sit on top of your tamped coffee before you lock in the portafilter.

What they do

Water leaves the group head in streams, not as an even curtain, and those streams punch into the top of the puck and carve channels. Water then races through the gaps instead of saturating all the coffee, which is why a shot can taste sour and bitter at once. A paper on top spreads the water across the whole surface first.

Paper or a steel puck screen?

Same job, different tradeoffs. Paper is cheap, completely disposable, and absorbs some oil on the way out, so your basket wipes clean. A steel screen costs more upfront but lasts indefinitely and needs periodic soaking. Plenty of people use paper on top and a screen underneath. If you're just trying it out, paper is the low-commitment way in.

Using them

Grind, distribute, tamp, then lay one flat on the puck and lock in. After the shot it comes out stuck to the puck and goes straight in the bin with it, which is the real appeal: your basket stays clean and knocking out gets less messy.
