Most drip machines fail at the one thing that matters: temperature. They heat water to somewhere in the region of correct and call it done. This one holds 195 to 205°F for the whole brew.

Why that range

Coffee's flavor compounds dissolve at different rates depending on how hot the water is. Below the range you extract the sour acids without the sugars that balance them, which is the thin, sharp cup a cheap drip maker gives you. Above it you pull bitterness you'd rather leave behind.

195 to 205°F is where the balance lands, and the Specialty Coffee Association certifies machines that can actually hold it. Most can't, because cold water keeps arriving and the element can't keep pace. This one is built to.

Even saturation and bloom

A wide showerhead spreads water across the whole filter bed rather than drilling into the middle, so all the coffee is extracted rather than some of it. The optional 30-second pre-infusion wets the grounds first and lets fresh coffee release its carbon dioxide, which otherwise pushes water away from the bed. That matters most with beans roasted in the last couple of weeks, which should be most of what you're drinking.

No hotplate, on purpose

A hotplate keeps cooking coffee after it's brewed, which is why the second cup from a diner pot tastes scorched. The double-wall stainless carafe holds heat for hours without applying any, so cup three tastes like cup one.

Is 5 cups the right size?

Yes if it's one or two of you. This is the size a couple finishes, and finishing the pot is the point, since coffee sitting in any carafe is slowly getting worse no matter how good the insulation. If you regularly brew for three or more, the 8-cup Connoisseur is the same machine scaled up.
