How it changes the cup

Paper filters absorb the coffee's natural oils on the way through. That's why paper pour-over tastes so clean and clear, and it's also why it can feel thin.

A metal mesh has much larger openings, so the oils and some very fine particles pass straight into your cup. You get more body, more texture, and a fuller, rounder flavour, closer to a French press but still recognisably a pour-over. The tradeoff is less clarity and a bit of sediment at the bottom. Whether that's better or worse is entirely a matter of taste, which is the honest answer nobody gives you.

Grind matters more here

Medium to medium-fine is the range. Too coarse and you lose the body you bought this for. Too fine and the mesh clogs, the flow slows to a crawl, and you over-extract into bitterness. There's less room for error than with paper, so if you're using a blade grinder this probably isn't the brewer for you.

Cleaning, honestly

This is the part people underestimate. Coffee oils build up in the mesh and go rancid, and a neglected metal filter will make every cup taste off. Rinse it thoroughly right after each brew, and give it a proper soak regularly. Do that and it lasts years. Skip it and you'll wonder why your coffee tastes stale.

Which size

200ml for a single cup, 400ml for two or one large mug. The 400ml is the safer pick if you're ever making coffee for someone else.
